I love to cook, but I’m not very creative in the kitchen. I am the type of cook who relies heavily on recipes and follows them to a T.
The one time I tried to improvise, I made my family cry because I went a little overboard with the cayenne pepper.
SO… when I recently looked in my fridge and came up with an original use for my leftovers, I felt like a GD genius.
I realize I didn’t invent the salmon zucchini quesadilla. In fact, I was so proud of myself I didn’t even Google it. So for the purposes of this blog (and my own giddiness) let’s pretend this is the first you’ve heard of it.
- pre-cooked salmon
- zucchini thinly sliced
- cheese. I like to use cheddar, but you could get crazy here and mix it up
- tortillas. Make your own or buy homemade style.l I like the ones from Trader Joe’s
How to make
I make mine with two tortillas in a pan, one on top and one underneath, with the goodies in between. I cut it pizza style because it’s easier to share between my two little girls. Folding one tortilla in half with your ingredients in between is certainly cleaner, but a little smaller
The beauty of this recipe (a term I use loosely) is you can mix it up with whatever you have in your kitchen! Add mushrooms, mix up the cheeses. I’m so happy I’ve re-discovered quesadillas. As a busy mom, they are a God send! Buen provecho!Pin It
