BabyCakes NYC: Eating with (and without!) allergies

One of my favorite allergen-sensitive addictions is BabyCakes Bakery. The only problem is that it’s not anywhere close to Reno, Nv. For this reason, I own both of their incredibly amazing and delish cookbooks and I love them to bits.  The best thing about Baby Cakes? Their confections are so fantastically yummy, you would never in a million years suspect that it was allergen-sensitve! Genius! Today we are honored to speak with one of the ladies behind it all, the General Manager of BabyCakes NYC location…

 

…Take it away Amy! Tell us a little bit about yourself..

 

My name is Amy Lachenauer and I am the General Manager of the New York BabyCakes NYC. I’ve worked for the company for a little over 3 years and I have to say that there is nothing better than waking up and frosting cupcakes first thing in the morning!

 

That sounds like a dream come true! Tell us, how did BabyCakes become a real, tangible thing?

 

The owner of BabyCakes NYC, Erin McKenna, realized she had food allergies as an adult and wasn’t able to indulge in the tasty treats she had enjoyed as a child and a teen. Since she had tried so many of the alternatives and found that they didn’t come close to the traditional treats that she had grown to know and love, she decided to work on her own recipes to create something amazing and allergy friendly. After over a year of baking, trial and error style, in her small apartment kitchen, she created most of the recipes that are the staples now at BabyCakes NYC. The mission of BabyCakes NYC is to make great tasting allergy friendly treats for all to enjoy!

 I know that your NYC location is the original, but are there any others?

 

There are currently three locations: our NYC location, our Los Angeles location on Larchmont Blvd, and a Florida location in Downtown Disney.

 

What is the hardest part about being an allergen-sensitive bakery?

 

The hardest part about being a bakery that caters to those with food allergies is getting people to try the items who don’t have a dietary restriction. Even though we’re all gluten free, vegan, and soy free, the treats still taste great and sometimes people think that just because they’re allergy friendly, they’re not going to taste as good. When I first started working at the New York location and I would tell customers walking in that we are vegan, gluten free, and soy free, some customers, without allergies, would make a face and ask if it still tasted good, or sometimes, they would even turn and walk out the door! Over time, once people gave the treats a try, they realized that these aren’t ordinary gluten free desserts, these are delicious!

What is the best part about being an allergen- sensitive bakery?

 

The best part is meeting the customers who have gone years or even their whole lives not being able to enjoy a donut or cupcake due to their allergies. It’s so amazing to see how touched they are by the products and the level of quality ingredients that we use. Seeing their tears of joy makes it a very rewarding job and makes BabyCakes an amazing company to work for.

 

What is your most popular confection and do you have anything new in the works?

 

Our top selling item is the cookie sandwich. Tied in second place are the donuts and cupcakes. Since our donuts are baked and not fried they have a unique cake flavor that is really very delicious! We have received a request to make a vegan and gluten free version of the cronut.

 

Ok, I am officially hungry.  …I have both BabyCakes books and love them so much! I hear there is a third book on the horizon, can you pass on any deets?

 

Since the book is still in the works, it’s hard to tell when it will be released, but I can tell you that it will have a lot more gluten free and vegan savory recipes which is very exciting!

  • favorite music …. Grimes, Purity Ring, and Cults
  • favorite book …. House of Leaves
  • favorite way to unwind …. I love taking relaxing baths and pampering myself with face masks while reading a really good book or skimming through tumblr pages
  • favorite BabyCakes treat …. Brownie cupcake is my favorite BabyCakes item (recipe in the cookbook and mixes available in store and online)
  • favorite thing about living in NYC ….  one of the best things about NYC is the closeness of everything. It’s easy to get to different places and no matter where you go, there is always great shopping!

 

 And did we forget to mention that Erin McKenna is on the cover of Cherry Bombe? SO RAD.

    At our house, we're pretty much obsessed with BabyCakes NYC. What a rad interview subject! They were part of the inspiration that pushed us to start baking on our own and eventually starting our business. Great interview Anna! Also…if you haven't tried their Chips Ahoy recipe, try them on a rainy day. They are so close to the real thing it they make feel like giddy kids again. -Brooke
